Abstract
Modified atmosphere packaging (MAP) and heat treatment are used to
maintain the quality of fresh cut fruit. This study aimed to determine the ability of
MAP and heat treatment in maintaining the quality and shelf life of fresh cut
pineapple batu (Ananas comosus). This research was conducted using an
experimental method with a single factor. The experimental design was arranged
in a completely randomized design (CRD) with 4 treatments, namely MAP with a
concentration of 73.70% argon added heat treatment at 52°C for 10 minutes (P1),
heat treatment with temperature 52°C for 10 minutes (P2), MAP with 73,70% argon
concentration (P3), and control without treatment (P4). The results showed that
MAP treatment with 73.70% argon concentration and added heat treatment at 52°C
for 10 minutes (P1) was the best treatment in maintaining the quality of fresh cut
pineapple batu up to the 10th day by showing the best results on the hardness
parameter of 0,63 N/mm2
, sugar reduction by 3,39%, titrable acidity of 0,54%, and
total phenol of 0,10 ppm.
