Abstract

Contaminated food can cause accelerate the growth of Salmonella typhimurium bacteria which causes gastroenteritis. Irrational and uncontrolled use of antibiotics for the treatment of bacterial infections can lead to resistance. Pineapple peel (Ananas comocus) which contains flavonoid chemical compounds can have potential as antibacterial. The purpose of this study was to see whether the ethyl acetate fraction of pineapple peel (Ananas comocus) ethanol extract had antibacterial agents against Salmonella typhimurium bacteria. The research method is a laboratory experiment with maceration extraction method using 70% ethanol and fractionation using ethyl acetate compound. Pinapple peel (Ananas comocus) extract and fraction by phytochemical test and antibacterial activity test by disc diffusion method against Salmonella typhimurium bacteria. Negative control used Dimethyl Sulfoxide (DMSO) and positive control used antibiotic chloramphenicol 1000µg/mL. The results of the antibacterial test of the ethyl acetate fraction of pineapple peel (Ananas comocus) against Salmonella typhimurium bacteria with a series of concentrations of 2000 ppm, 3000 ppm, and 5000 ppm with an inhibition zone of 0.00 mm
